Overview

The undergraduate degree in Food Science and Technology covers the full educational spectrum of food science and technology, with a focus on four themes namely: food quality and safety, new food product innovation, food processing and nutrition.

Students will acquire knowledge of the science and technology of food across the whole value chain. This spans upstream agricultural science and urban farming technology, to food science and manufacturing technology, food safety and sensory science, to downstream nutritional science and food waste valorisation.

Preparing Professionals for the Future of Food and Health

Discover the science, technology and research that go into all types of food products. At the Department of Food Science and Technology, we apply principles from chemistry, biology, engineering and nutrition to find solutions to global issues related to food safety, security, sustainability, health and much more. You will also discover how this science discipline can take you further, around the world and in different industries.

Speaker’s Profile

Dr Liu Mei Hui graduated from the pioneering batch of NUS’ Food Science and Technology Programme. She received numerous food industry awards as a student. Following her first degree, Dr Liu was awarded the prestigious A*STAR (Agency for Science, Technology and Research) Graduate Scholarship to pursue a Ph.D. in Molecular Biology. Her research work at the Genome Institute of Singapore, A*STAR and Cornell University brought her on many scientific journeys in the fields of molecular biology, nutrition and genomics. Her multidisciplinary research was recognised in prestigious journals including Nature. Dr Liu is currently Assistant Dean at the Faculty of Science, where she oversees student counselling and manages student groups and societies.

Alumna Talk: Curiosity in Life and Learning

As Ralph Waldo Emerson once said, “Life is a journey, not a destination.” In this talk, Jie Ai will share how her learning experiences at NUS equipped her with the skillsets and aptitudes to embrace the unknown and venture into career pathways spanning multidisciplinary fields. These range from consulting to ecosystem development for startups, and product management in fields as diverse as artificial intelligence, alternative proteins and synthetic biology.

Alumna Profile

Ms Lim Jie Ai is Regional Project Manager (APAC) at Manus Bio , a biotechnology startup, where she oversees the regulation of innovative food ingredients in Asia Pacific markets. She was previously with NUS Enterprise, where she helped to build a deep technology startup ecosystem for Israeli technology firms looking to expand in the ASEAN (Association of Southeast Asian Nations) region. Jie Ai holds a Bachelor’s Degree in Sciences (Honours) majoring in Food Science and Technology from NUS.
