FST e-Open House 2021
Overview
The undergraduate degree in Food Science and Technology covers the full educational spectrum of food science and technology, with a focus on four themes namely: food quality and safety, new food product innovation, food processing and nutrition.
Students will acquire knowledge of the science and technology of food across the whole value chain. This spans upstream agricultural science and urban farming technology, to food science and manufacturing technology, food safety and sensory science, to downstream nutritional science and food waste valorisation.

Discover the science, technology and research that go into all types of food products. At the Department of Food Science and Technology, we apply principles from chemistry, biology, engineering and nutrition to find solutions to global issues related to food safety, security, sustainability, health and much more. You will also discover how this science discipline can take you further, around the world and in different industries.
Speaker’s Profile
Dr Liu Mei Hui graduated from the pioneering batch of NUS’ Food Science and Technology Programme. She received numerous food industry awards as a student. Following her first degree, Dr Liu was awarded the prestigious A*STAR (Agency for Science, Technology and Research) Graduate Scholarship to pursue a Ph.D. in Molecular Biology. Her research work at the Genome Institute of Singapore, A*STAR and Cornell University brought her on many scientific journeys in the fields of molecular biology, nutrition and genomics. Her multidisciplinary research was recognised in prestigious journals including Nature. Dr Liu is currently Assistant Dean at the Faculty of Science, where she oversees student counselling and manages student groups and societies.

Alumna Talk: Build a Sustainable Food Ecosystem
Driven by population growth and growth in consumer awareness, the global food supply is stretched to increase its capacity by at least 50% by year 2050, especially in Asia. At the same time, today’s food system faces significant challenges including food loss and waste, packaging waste, trade barriers, as well as the burden of lifestyle diseases like obesity. These are cross-cutting issues that require scientists and policy makers to work closely together to formulate solutions. YiFan will share how her experience in science and regulatory affairs can address food system challenges and the career pathways available.
Alumna Profile
Ms Jiang Yifan is Head of Science and Regulatory Affairs of Food Industry Asia (FIA), where she leads FIA in providing science-based advocacy to promote regional / global regulatory harmonisation in platforms such as the Codex Alimentarius Commission (CAC) and the Association of Southeast Asian Nations (ASEAN). She also leads FIA’s initiatives in various food safety capacity building programmes and technical training in partnership with regulatory agencies and development partners to help enhance the national food safety legislative frameworks and standards-setting activities in Asian countries. Prior to FIA, YiFan worked with a global regulatory consulting firm, EAS Strategies, as a Regulatory Affairs Advisor, as well as several food companies in the areas of product development and quality assurance. YiFan holds a Bachelor’s Degree in Applied Sciences (Honours) majoring in Food Science and Technology from NUS.
