PhD students PUA Yi-Lin Aileen (under supervision of Associate Professor LIU Shao Quan) and ZHAO Xue (under supervision of Associate Professor YANG Hongshun) received the FST Outstanding Graduate Researcher Award 2021. This annual award is given to PhD students or recent PhD graduates who demonstrated excellence in their research work during their postgraduate study at FST.
About Aileen’s research
Aileen’s current research centres on addressing analytical challenges in coffee aroma, with a focus on state-of-the-art gas chromatography-based methods. The research scope covers the analytical workflow from sample preparation to analyte detection, to improve the coverage and detection of coffee volatiles for nuanced coffee profiling and flavour creation. This research project has been exciting for her as it provided her the opportunity to author and co-author 10 publications in collaboration with industry partners like Mane SEA, Agilent Technologies and Gerstel LLP, and to see her research applied in consumer products.
About Zhao Xue’s research
Zhao Xue’s PhD study focused on two objectives: to improve the quality and extend the shelf-life of fish fillets by vacuum impregnated fish gelatin-based coatings and to reduce the foodborne pathogen risk in seafood by nisin-based strategies. The research findings provide valuable references for the seafood industry for the development of high-quality seafood products and prevention of bio-contamination in aquatic food.
